I missed National Homemade Cookie Day yesterday, but should that stop me from sharing the best recipe ever for pumpkin cookies? I think not!!!
I'm not going to be like a food blogger and write a book here. Let's just cut to the chase with the recipe. ;) These are SO GOOD. The browned butter frosting absolutely MAKES the cookie. So yum!! Let me know if you try them!
Pumpkin Cookies
1 cup sugar
1 cup solid pack pumpkin
1/2 cup shortening
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
Heat oven to 375. Mix sugar, pumpkin, and shortening. Stir in flour, baking powder, baking soda, cinnamon, and salt. Drop by teaspoonfuls onto ungreased cookie sheet. Bake until light brown, 8-10 minutes. Immediately remove from cookie sheet; cool on a wire rack.
Browned Butter Frosting:
1/4 cup butter
2 cups powdered sugar
1 tsp. vanilla
1-2 Tbsp. milk
Heat butter in a small saucepan over medium heat until delicate brown. Beat in powdered sugar and vanilla. Beat in milk until smooth. Frost cooled cookies. Enjoy!
